Bone-in chicken breasts marinated with garlic, thyme, and lemon, then air-fried crisp and juicy

On a night when you have just enough energy to season something and walk away, this is the plan. The marinade takes 5 minutes, the air fryer does the rest, and you're not standing over a pan managing heat while everything else in the evening still needs you. As you move toward Remission, that kind of low-effort reliability is worth more than it sounds like on a hard week.

Selenium shows up in chicken in real amounts, and it's involved in how your thyroid converts one hormone into its active form, worth knowing if your thyroid is one of the things you're keeping an eye on these days. Garlic and thyme in the marinade add real aromatic depth without a long ingredient list, and the lemon zest keeps the whole plate from tasting heavy. It is plain food, done well, and that is the point.

Let it rest a few minutes before you cut into it. The juices settle back into the meat instead of pooling on the cutting board, and that's the difference between a dry piece of chicken and a good one.

Ingredients

  • 2 bone-in chicken breasts, skin on
  • 3 cloves garlic, crushed
  • 2 teaspoons fresh thyme, leaves picked and finely chopped
  • 1/2 tablespoon lemon zest
  • 2 tablespoons olive oil
  • 1 1/4 teaspoons sea salt
  • Sliced lemon, optional, for serving

Method

  1. Pat the chicken breasts dry. In a bowl, stir together the crushed garlic, chopped thyme, lemon zest, olive oil, and sea salt into a loose marinade.
  1. Rub the marinade all over the chicken, getting it under the skin where you can. If you have time, let it sit for 15 to 30 minutes so the flavors settle in.
  1. Preheat the air fryer to about 360F. Place the chicken breasts skin-side up in the basket in a single layer, leaving room around them for air to circulate.
  1. Air-fry until the skin is golden and crisp and the chicken is cooked through, around 25 minutes. Cook to an internal temperature of 165F at the thickest part; timing varies by machine and breast size, so use a thermometer.
  1. Rest the chicken for 5 minutes before slicing. Serve with fresh lemon slices if you like.

Oven variation

If you do not have an air fryer, roast the marinated breasts skin-side up in a hot oven, around 400F, until the skin crisps and the internal temperature reaches 165F, roughly 30 to 40 minutes depending on size. This timing is an estimate and is flagged for testing.
