Creamy vegetable beef soup: comfort without the dairy

A creamy soup feels like a small luxury, and on AIP the creaminess usually has to come from somewhere other than dairy. Here it comes from sweet potato, simmered soft in broth and pureed until the base is smooth and velvety. There is no cream, no nightshade, nothing the elimination phase asks you to set aside. It is the kind of bowl that warms you from the inside on a hard day, which is exactly the day this work tends to need it most.
The nourishment runs deep. The bone broth base brings gelatin that supports the gut lining as it mends, the beef is a source of zinc and iron involved in immune regulation and energy, and the sweet potato and broccoli add fiber and beta-carotene that feed a healthier gut community. This is not a cure. It is a single honest meal that keeps the long work moving forward.
Build the bowl with a little care. The pale, creamy base looks beautiful with the green broccoli and dark mushrooms folded in and a scatter of green onion on top. Source the beef from an animal raised well if you can, and take a breath before the first spoonful. Eating slowly, in a settled body, is part of how the food serves you.
Ingredients
- 1 to 2 large white sweet potatoes (about 1 lb total), peeled and cut into chunks
- 1 quart bone broth
- 1 broccoli head, cut into florets
- 1 lb ground beef
- 1/4 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 4 oz button mushrooms, sliced
- 4 green onions or scallions, chopped
This recipe is AIP elimination-compliant as written. The creaminess comes entirely from pureed sweet potato, so there is no dairy and no swap needed.
Method
Put the sweet potato chunks in a large pot with the bone broth. Bring to a boil, then lower to a simmer and cook until the sweet potato is very tender, about 15 to 20 minutes. Using a blender or an immersion blender, puree the sweet potato right into the broth until the base is smooth and creamy. Keep the base warm over low heat.
While the sweet potato simmers, warm a skillet over medium heat and brown the ground beef, breaking it up as it cooks. When it is nearly done, add the sliced mushrooms and cook until they soften and release their liquid. Stir in the salt, onion powder, and garlic powder.
Add the broccoli florets to the pureed base and simmer until they are bright green and just tender, a few minutes. Stir the browned beef and mushrooms into the soup. Taste and adjust the salt. Serve in bowls with the chopped green onion scattered over the top.
Instant Pot variation
Use the Saute function to brown the beef and mushrooms right in the pot, then set them aside. Add the sweet potato chunks and bone broth, lock the lid, and cook on high pressure for about 6 minutes, then quick-release. Puree the sweet potato into the broth with an immersion blender, return the beef and mushrooms, add the broccoli, and simmer on Saute for a few minutes until the broccoli is tender. Finish with the green onion.
