One-pot lamb curry with sweet potato and cauliflower simmered in coconut milk with ginger, garlic, turmeric, and cinnamon

Curry night usually means a jar of paste and a spice cabinet you cannot fully vet on this protocol. This one asks you to build the flavor from scratch: marinate the lamb while you prep, bloom cinnamon and turmeric in the pot, then let it simmer for most of an hour. That is patience on a night when patience might already be thin, and it is precisely the discipline this phase keeps asking for.

Lamb pulls its weight here. Iron runs high in it, essential for moving oxygen through the body, worth naming when Autoimmune fatigue is already part of your days, and B12 is in there too, tied to nerve function. Turmeric earns its place as well. The research keeps pointing toward a role in calming an overactive inflammatory response, which is worth naming without overstating it.

Ask where the lamb came from and choose an animal that lived well before it reached your pot. An animal gave something to make this meal, and finishing the bowl with cilantro and a squeeze of lime is 1 small way of honoring that instead of rushing past it.

Ingredients

  • 1 lb stewing lamb, cut into pieces
  • 1 small yellow onion, sliced
  • 4 cloves garlic, minced or crushed
  • 1-inch piece fresh ginger, grated or finely chopped
  • 1/4 cup cilantro, chopped, plus more for garnish
  • 2 TBSP green onions, sliced
  • 2 TBSP olive oil or coconut oil
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • 2 cups sweet potato, cubed (any variety)
  • 1 tsp freshly squeezed lime juice
  • 1 cup full fat coconut milk (additive free)
  • 1 cup water
  • 1/2 tsp sea salt
  • 1 small head cauliflower, cut into florets

Method

  1. Combine the lamb with the garlic, ginger, half the cilantro, the green onions, cinnamon, turmeric, and a pinch of the salt. Let it marinate while you prep the vegetables, ideally 20 to 30 minutes or longer if you have time.
  2. Heat the oil in a heavy pot over medium heat. Add the sliced onion and cook until soft, then add the marinated lamb and sear it on all sides to build color and depth.
  3. Pour in the coconut milk and water, add the remaining salt, and bring to a gentle simmer. Cover and cook on low until the lamb is becoming tender, about 45 minutes to 1 hour, stirring now and then.
  4. Add the sweet potato and continue to simmer, covered, until it begins to soften, about 15 minutes.
  5. Add the cauliflower florets and cook until both vegetables are tender and the sauce has thickened, another 10 to 15 minutes.
  6. Stir in the lime juice. Taste and adjust the salt. Serve topped with the remaining cilantro.

Instant Pot variation

High pressure: Use the saute setting to soften the onion and sear the marinated lamb. Add the coconut milk, water, sweet potato, and salt. Seal and cook on high pressure for about 25 minutes, then let the pressure release naturally for 10 minutes. Open, set to saute, add the cauliflower, and simmer until tender, then stir in the lime juice. Times are estimates and untested, so verify before relying on them.

Slow-cook setting: Sear the onion and lamb on saute, then add the coconut milk, water, sweet potato, and salt. Set to the low slow-cook setting for 6 to 8 hours. Add the cauliflower in the final 30 to 45 minutes so it does not break down, then finish with the lime juice. Times are estimates and untested.

Notes

  • Confirm the coconut milk is full fat and additive free, with no gums or stabilizers if you are sensitive to them.
  • The source curry stays nightshade-free and seed-spice-free as written, using only cinnamon and turmeric, so no seedless AIP curry blend swap was needed here.
  • Servings and total time are not given in the source. About 4 servings is an estimate.
  • This reheats well and deepens in flavor overnight, which makes it good for batch cooking.
