Sweet potato everything bagel chips: the crunch, built for AIP from the start

Standard everything bagel seasoning is off the table on AIP twice over, once for the sesame seeds and once for the poppy seeds. Rather than skip the flavor entirely, this chip builds its own version from dried onion, garlic, and chives, so the crunch and the craving both get answered without either seed anywhere near the pan.

Sweet potato holds up well to thin slicing and high heat, and it carries beta-carotene and potassium that a bag of chips from the store never will. This is a real snack for the moments when you want something crisp and salty in hand, not just a consolation prize.

A mandoline slicer earns its keep here. Even 1/8-inch slices matter for getting a crisp chip instead of a chewy one, and doing it by hand with a knife makes that consistency hard to hit.

Ingredients

  • 1 large sweet potato, sliced 1/8-inch thick on a mandoline
  • 4 tablespoons avocado oil, divided (2 tablespoons per side, not per chip)

AIP everything bagel seasoning:

  • 1 teaspoon dried onion flakes
  • 1 teaspoon dried garlic granules
  • 1 teaspoon dried chives
  • 1/2 teaspoon sea salt

Optional dip:

  • 1/2 cup coconut cream
  • 1 tablespoon avocado oil
  • 1 teaspoon apple cider vinegar
  • Pinch of sea salt

Method

  • Preheat the oven to 400 F and line a baking sheet with parchment.
  • Toss the sweet potato slices with half the avocado oil, coating the whole batch rather than drizzling chip by chip, and arrange in a single layer on the sheet.
  • Combine the onion flakes, garlic granules, chives, and salt. Sprinkle half the seasoning blend over the slices.
  • Bake 10 minutes, then flip each slice. Coat with the remaining oil and sprinkle with the remaining seasoning.
  • Bake another 8 to 10 minutes. Ovens vary quite a bit here, so check every minute or two toward the end rather than walking away. Cool on the sheet before serving; they crisp further as they cool.
  • For the dip, whisk the coconut cream, avocado oil, apple cider vinegar, and a pinch of salt together until smooth.
