The AIP Journey, Start to Finish: A Map of the Phases
By Daniela Hess · Great Energy · June 27, 2026

People often start the Autoimmune Protocol without a clear picture of the whole road, and that is where a lot of the fear comes from. So here is the map, end to end, so you always know which part you are in and what comes next.
This food journey is the backbone of the Autoimmune Recovery Method (ARM), a complete approach to moving an Autoimmune condition 'Toward Remission'. The map below is the food part of that larger road.
AIP is a structured journey with 4 phases, and what comes off your plate is fullest in the middle, then opens back up, never a permanent elimination. Knowing that from the start changes how the hard weeks feel.
Phase 1: the transition in
You do not have to change everything overnight. The first phase is simply getting from how you eat now to a full elimination, and there are 2 honest ways to do it: gradually, one layer at a time, or rapidly, with a clean break. Neither is braver than the other, and the choice depends on your real life. I walk through both, and how to choose, in 'Gradual or Rapid, Choosing Your Transition'.
This is also the preparation phase: stocking the kitchen, making the broth, telling the people in your life, choosing a starting week with some room in it. The single biggest predictor of a smooth start is preparation, far more than willpower, which is the whole of 'Preparing to Start'.
Phase 2: the elimination phase
This is the core of it. You remove the foods that most commonly drive Autoimmune activity, and you hold a steady, nourishing Core list while your body settles. What comes out and why is covered food by food, and the decision about how thorough to be is in 'Choosing Core or Modified, and What Your Plate Looks Like' and 'Why I Guide People Through Core AIP: What the Research Has Studied'.
At its heart, this phase is the shift from processed to real, the same move I lay out in 'For the Love of Whole Foods: The Shift from Processed to Real'.
The length matters more than most people are told. You will see 30 days offered, and 30 days is a floor, not the goal. The gold standard is 90 days, because an immune system that has been on alert for years, and a gut lining working to repair, need a real stretch of calmer conditions before the picture is clear.
Gluten and dairy are a special case here, removed for good rather than tested later, for the reasons in 'Grain-Free, Not Just Gluten-Free, and Why Dairy Comes Out Too'.
Phase 3: reintroduction
This is the phase people forget exists, and it is the heart of the whole protocol. Once you have a calm baseline, you begin testing the gray-area foods one at a time, in a deliberate order, watching how your body responds. This is how you discover your own map, what your particular body can hold and what it cannot.
It has its own method: how to know you are ready, in 'Reintroduction: How to Know You Are Ready'; how to run a single test, in 'The Reintroduction Procedure: How to Do It'; and the staged order, beginning with 'Stage 1 Reintroductions: Where to Begin'.
One honest note that saves people real heartache: a reaction does not always show up as a symptom you can feel, so for grains and dairy we do not rely on how you feel, we keep them out. Antibodies are the honest readout. This careful testing is where the Autoimmune Recovery Method asks you to trust the data over the feeling.
Phase 4: your personalized way of eating, for life
Reintroduction ends with something better than a return to how you ate before: the widest, most nourishing way of eating that your own body has shown you it can hold. For some that includes white rice or certain nightshades; for everyone it keeps gluten and dairy out.
This is a personalized, livable diet you built from evidence about your own body, and it keeps gently updating as you heal, never a life sentence of elimination, which is the subject of 'Reintroduction as Lifelong Practice'.
That is the whole journey. Transition in, settle deeply, test honestly, and arrive at a way of eating that is yours. You are not lost on this road. You have a map, and you do not have to walk it alone.
