Matcha latte: a warm, green start to a hard-working morning

A morning ritual matters more during the elimination phase than people expect. When the work is long and the early weeks are heavy, a warm cup you make with your own hands is a small anchor in the day. This matcha latte gives you that. It asks for a few minutes and a whisk, and it gives back a quiet beginning to the morning that costs you nothing you are trying to avoid.
What you are drinking is matcha warmed with coconut milk and a touch of honey. Matcha is a source of polyphenols, including the catechins linked to a calmer inflammatory response, and the coconut milk makes it rich and satisfying, which is why a small cup goes a long way. Keep the framing honest. This is a gentle, supportive drink, not medicine, and it carries caffeine, so it belongs to the morning or early afternoon rather than the evening.
Whisk it until it is smooth and let yourself enjoy the color, the deep green that comes from real leaves ground to powder. Hold the warm cup a moment before you drink. The few minutes of care are part of how the morning settles.
Ingredients
- 1 cup water
- 4 teaspoons matcha powder
- 4 cups coconut milk
- 2 tablespoons honey
Method
Simmer the water in a saucepan over medium heat.
Whisk in the matcha until it is fully dissolved and lump-free. Add the coconut milk and lower the heat to medium-low.
Warm everything through, stirring now and then. Stir in the honey to taste and serve.
A note on the optional toppings: the original lists marshmallows and caramel as add-ons. Those are left off here, since they are not AIP Core unless you make a vetted, AIP-compliant version yourself. The latte stands on its own without them.
This is a quick stovetop drink, so it needs no air fryer or Instant Pot variation.
