Orange cream smoothie: a bright, kind breakfast

Breakfast is often the hardest meal in the elimination phase. Eggs are out, the usual cereals and toast are out, and a lot of mornings end with savory leftovers because that is what is easy. That is a fine answer, and some days you want something sweet and quick that still keeps you inside the lines. This is that. You are moving an autoimmune condition toward remission, which is long, patient work, and a breakfast you actually look forward to is one small way the week gets easier to keep.

What you are drinking is mostly citrus, banana, and coconut cream. The orange and mandarins are a source of vitamin C and folate, and the coconut cream gives the smoothie its soft, creamsicle body. A scoop of collagen peptides is optional. If you add it, the drink is no longer vegan, and you can leave it out with no loss to the flavor. Keep the framing modest. This is a supportive, whole-food breakfast, not a cure.

Before you blend, take a second with the fruit in front of you. The color alone is worth a breath. Pour it into a glass you like, sit down, and drink it slowly rather than on the way out the door. The state you eat in is part of how the food serves you.

Ingredients

  • 1 chilled or frozen banana
  • 1 Navel orange, peel and pith removed
  • 2 small mandarins or clementines, segmented
  • 1/2 cup filtered water
  • 3 tablespoons coconut cream
  • 1 scoop collagen peptides (optional; omitting keeps it vegan)
  • 1/4 teaspoon vanilla powder (swapped in for the source's vanilla extract; extract carries alcohol and is reintroduction-stage)
  • 1/8 teaspoon sea salt
  • Optional garnish: orange zest, shredded coconut, or crushed banana chips

Method

Add the banana, orange, mandarin segments, water, coconut cream, vanilla powder, and sea salt to a high-speed blender. If you are using collagen peptides, add them now.

Blend until smooth and creamy.

Pour into a glass, garnish if you like, and drink it fresh.

A note on the swap: the source uses vanilla extract, which contains alcohol and sits in the reintroduction stage of AIP. Vanilla powder gives the same flavor and keeps the smoothie inside strict elimination.

This is a no-cook blender drink, so it needs no air fryer or Instant Pot variation.
